Chocolate Without Emulsifiers

Hola, label reader. Most chocolate bars list soy lecithin (E322) or PGPR (E476) near the end of the ingredients. Makers add these emulsifiers so chocolate flows with less cocoa butter and less time in production. Every MYZO bar skips them.

What goes into a MYZO bar

Our 70% Dark has four ingredients: cacao mass, cocoa butter, organic sugarbeet sugar and organic Madagascar vanilla bean. The other bars add one more: freeze-dried raspberries, whole hazelnuts, natural lavender essence, organic oat flour or whole milk powder. No palm oil, no soy lecithin, no emulsifiers.

The cacao comes from one place: the Matina valley, between the Talamanca mountains and Costa Rica's Caribbean coast, where one family farm grows Criollo and Trinitario trees. We buy the beans directly and make every bar bean-to-bar, in small batches, in Ukraine.

Why skip emulsifiers?

Without lecithin, chocolate needs more cocoa butter and more patience to turn smooth. What you get back is a clean melt and a bar that tastes of cacao, not of the factory. Read the full story in why MYZO says "no, gracias" to emulsifiers.

How to spot emulsifiers on a label

Flip the bar and read the end of the ingredient list. Soy lecithin, sunflower lecithin, E322, PGPR or E476 mean the maker used an emulsifier. A short list of cacao, cocoa butter, sugar and maybe vanilla means they didn't.
